You should wait until the drink has settled as much as possible before adding isinglass. To fine your drink with isinglass, use the following procedure: Step 1. Dissolve 30 to 60 mg/L in a volume of water equal to 1% of your drink size.

  1. Wash the Irish Moss to remove sand and other matter.
  2. Place the Irish Moss in water overnight. 
  3. Place 5 quart
  4. Add Irish Moss, gum arabic, isinglass, and linseed.
  5. Cook for ¾ hour until all the ingredients, with the exception of the Irish Moss, has dissolved.
  6. Pour the liquid into a strainer to another container.

Isinglass is a substance obtained from the dried swim bladders of fish. It is a form of collagen used mainly for the clarification or fining of some beer ,wine and drinks like Irish Moss. It can also be cooked into a paste for special gluing purposes.
